There are four varieties of commercially viable coffee: Arabica, Liberica, Excelsa, and Robusta. Growers predominantly plant the Arabica species. Although less popular, Robusta tastes slightly more bitter and contains more caffeine.

Definition: A biennial umbelliferous plant (Apium graveolens) native of the seacoats of Europe and Asia. When deprived of its acrid and even poisonous properties by cultivation, it becomes celery.
